Spicy Lentil Taco Salad

Today I finished the last book in the Mark of the Lion series by Francine Rivers.  All three books were really good!  The first two were can’t put ’em down, edge of your seat, page-turners.  So so so so good.  These two books also read more like a Part I and Part II – you can’t really stop at the end of book one because the story isn’t over.  The third book is more of a spinoff of books one and two rather than a sequel.  It was a fun and fulfilling read, but not quite as gripping as the first two.  Like many of Francine Rivers’ books, these are works of christian historical fiction.  This series takes place after Jesus was crucified during the gladiator days in Rome.  There’s romance, action, suspense, history… not much comedy, but these books otherwise have it all!  Needless to say, I highly recommend this series!

Now on to my other favorite hobby – cooking!  A while back, I posted a recipe for Garlicky Tomatoey Lentils, which you can find HERE.  A Vegan In Progress made the great suggestion of using lentils in tacos.  Lentils are so versatile and work great in the place of meat or beans.  They also take on pretty much whatever flavor you give them – here – Mexican and spicy!  This recipe is filling, healthy, and very satisfying.  Plus, you can play around with the veggies depending on what you have on hand.  Hope you enjoy!

Spicy Lentil Taco Salad

Spicy Lentil Taco Salad

Ingredients

  • 1 cup red lentils
  • 1 cup water
  • 1 cup tomato puree
  • 1 small yellow onion diced
  • 4 campari tomatoes diced bite-size
  • 15 oz can black beans
  • 11 oz corn
  • 2 cups shredded lettuce
  • 2 avocados diced bite-size
  • 1 cup tortilla chips crushed
  • 2 t chili powder

  • 1 t garlic powder
  • 1 t salt
  • 1/2 t ground black pepper
  • 1/2 t paprika
  • 1/2 t oregano
  • 1/4 t cayenne pepper

Directions

1. Add lentils, water, and tomato puree in a pot and bring to a boil.  Once boiling, reduce to simmer and let sit covered for about 20 minutes until the liquid is absorbed and the lentils are soft.

2. Spray a pan and saute the diced onion until it begins to soften.

3. Combine the spices in a small bowl.

4. In a large bowl, combine black beans, corn, onions, lentils and spices.

5. Top with diced tomatoes, avocado, lettuce and crushed chips.
