Whole Grain Carrot Cake with Lemon Glaze

Tonight a friend came over for dinner and to watch the bachelor, which I recorded from Monday night.  I haven’t seen all the seasons, but I gotta say, I do find it quite entertaining!  And I’m still holding on for the next Trista and Ryan 🙂 I like Sean (the current bachelor) – he seems like a sweet and sincere guy.  I hope he finds someone sincere too, but its hard to tell who’s there for him and who’s there for their 60 seconds.  Anyways, it made for a fun night of tv watching with my friend and a great opportunity to chow down!

For dinner, i made the Zucchini Quinoa Lasagna from Peas and Thank You.  This lasagna is AMAZINGGG!  It’s in my regular meal rotation.  It is quick and easy to make, has lots of good, nutritious ingredients, and tastes like a yummy italian pasta!  The lasagna was accompanied by an Avocado Pear and Walnut Salad. This salad was light and sweet and was the perfect accompaniment to a rich, heavy lasagna.  For dessert, I made the Whole Grain Carrot Cake Loaf from Oh She Glows.  This loaf was subtley sweet and full of grated carrots (I love hiding veggies in desserts!).  The Lemon Glaze on top was delish!

Avocado Pear and Walnut Salad

Salad Ingredients

  • 3-4 cups of arugula, unpacked
  • 1 avocado, chopped
  • 1 bosc pear, chopped
  • 1/3 cup walnuts

Dressing Ingredients

  • 2 T canola oil
  • 1 t honey

  • 1/4 t mustard powder
  • 1/8 t salt


1. Combine salad ingredients

2. Stir dressing ingredients until combined.

3. Toss salad with dressing.

Carrot Apple Beet Juice  (CAB Juice)

CAB juice is a juicing classic.  If you are new to juicing vegetables, start with this one.  It is refreshing and sweet and you would never guess you were drinking veggies!  Once you’ve tried the basic CAB, begin experimenting.  You can add just about anything to this basic juice and it will still be delicious.  Some of the more common ingredients that I add in are spinach, mint, lemon, lime, ginger, cilantro, parsley, beet greens, cucumbers, and celery.  Cucumber and celery are great because they don’t change the flavor too much and they add lots of liquid, allowing you to drink a bigger glass of this yummy juice!

The recipe for the juice pictured below is as follows:

  • 2 carrots

  • 1 beet
  • 1/2 cucumber
  • 1 golden delicious apple
  • 1 thin slice ginger
  • 1/2 lemon with rind image
